Colour-coding is the system professional kitchens use to prevent cross-contamination, and it works because it needs no training to follow — you simply match the handle colour to the food. The standard coding runs: red for raw meat, blue for fish and seafood, yellow for raw poultry, green for fruit and vegetables, brown for cooked meat, white for dairy and bread, and purple for allergen-free preparation. That last one matters enormously in any kitchen serving customers with allergies. Available in 6, 8, 9 and 10 inch blades, so each station gets the right size. Suitable for restaurants, hotels, catering businesses, institutional kitchens and serious home cooks.

Buying guide
Colour-coding only works if the whole kitchen follows it, so post the code where staff can see it and match your chopping boards to the same colours — knives alone solve half the problem. The purple allergen-free knife should be stored separately and washed separately, since that is the one where a mistake has the most serious consequences. Never put kitchen knives in a dishwasher: heat and detergent damage edges and handles. Wash, dry and store immediately after use, hone regularly, and replace any knife whose handle colour has worn to the point of being unclear.
How it compares
Against a single set of knives, colour coding is the simplest food-safety system a kitchen can adopt and the one inspectors look for. Against a domestic knife block set, these are built for commercial service. For a home kitchen, even two or three coded knives — raw meat, produce, cooked food — meaningfully reduce risk.
