Milk boils over quickly in any pan, so stay close and lower the heat once bubbles begin to rise around the edge. Use medium heat on gas; the light body heats fast, so very high flames are unnecessary and can scorch milk on the base. After use, soak briefly to loosen milk residue, then wash with a soft sponge.
