Preheat the hotpot before filling it — a splash of boiling water swirled and poured out warms the inner wall, and food then stays hot for noticeably longer, because a cold interior takes heat out of the first serving. Fill it as full as practical, since a half-empty insulated container loses heat far faster than a full one. Put food in already hot; insulation maintains temperature, it does not create it.
