Colour-Coded Commercial Chopping Boards, 50x40cm and 60x40cm β€” WIMU Kitchen Nairobi

Colour-Coded Commercial Cho...

Colour-coded boards are the other half of a food-safety system, and the half most kitchens skip. Matching a board to each food category stops raw meat juices meeting salad on the same surface β€” the most common route for cross-contamination in any kitchen, professional or domestic. These are commercial-grade boards in two sizes: 60 x 40 x 2cm for butchery and heavy prep, and 50 x 40 x 1.5cm for general work. Colours available are white, blue, yellow, brown and green, following the standard coding used by restaurants, hotels, caterers and institutional kitchens. The thickness matters as much as the colour: a 2cm board stays flat and takes a cleaver.

Buying guide

Follow the standard coding so anyone trained elsewhere reads your kitchen instantly: blue for fish, yellow for raw poultry, green for fruit and vegetables, brown for cooked meat, white for dairy and bread. Store boards upright and separated so they dry and do not transfer between surfaces. Replace any board with deep knife grooves β€” scored plastic harbours bacteria that washing cannot reach, and it is what inspectors look for. Wash in hot soapy water immediately after use, sanitise between food types, and never cut raw meat on a board you will then use for salad, regardless of colour.

How it compares

Against a single board, colour coding is the simplest food-safety system a kitchen can adopt. Against wooden boards, plastic can be sanitised properly and replaced cheaply when scored. Pair them with colour-coded knives so the system covers both the blade and the surface.
