Opening a Restaurant Kitchen in Kenya: Equipment List
The number that drives every equipment decision in a new restaurant is not your seat count. It is your covers per service β how many meals actually leave the kitchen. Get that number honest and the rest of the list calculates itself. Get it wrong and you either buy equipment that idles or run a service you cannot plate.
Work out covers first
Seats Γ turns per service = covers. Forty seats turning twice at lunch is 80 covers, not 40. A cafΓ© with 20 seats turning four times is doing the same volume as a 40-seat restaurant turning twice β and needs comparable dishware.
Be honest about turns in your first six months. Most new operators plan for the turns they want and buy for a volume they do not yet have.
Front-of-house quantities
The working rule for dishware is three times your peak covers. One set in use, one being washed, one clean and ready. Below 3Γ your service stops for the dishwasher.

Two rules that save money later:
- Buy plain white, and buy a pattern that is still stocked next year. Breakage is continuous. If you cannot re-order the same plate in eight months, your tables slowly stop matching.
- Buy one shape, in three sizes. Mixed shapes look accidental in photographs, and food photography is now part of your marketing whether you planned for it or not.
The kitchen list, by station
Prep
- Colour-coded chopping boards β separate boards for raw meat, cooked food and vegetables. This is a health-inspection basic, not a nicety.
- Chef's knives, one per prep cook, plus a boning knife and a serrated knife.
- Mixing bowls in three sizes, stainless steel.
- A weighing scale. Portion control is the difference between a food-cost percentage you control and one you discover at month end.
- Measuring jugs and spoons.
- Meat mincer if you are making your own sausage, kebabs, koftas or burger patties.
Cooking
- Sufurias in graduated sizes β at least four, ranging from small sauce to bulk rice.
- Two frying pans minimum, one heavy for searing.
- A stock pot large enough for your busiest soup or stew day.
- A pressure cooker if beans, githeri or tough cuts are on the menu. It pays for itself in gas.
- Tongs, ladles, turners β double what you think, they disappear.
Holding and service
- Chafing dishes if you do buffet or events β one per dish per 50 guests.
- Serving spoons, two per dish.
- Trays for carrying, and more trays for stacking.
- Insulated flasks for tea and coffee service.
Storage
- Airtight containers for dry goods. In Kenya this is pest control as much as organisation β open flour and rice attract weevils and ants fast.
- Labelled containers with dates. "First in, first out" only works if you can read the dates.
- Fridge organisation bins so stock is visible. Invisible stock is wasted stock.
Cleaning
- Separate cleaning equipment for kitchen and toilets. Colour-code it.
- Bins with lids, one per station.
- Enough bin liners that nobody improvises.

The right-hand column is where new restaurants lose capital. Anything you cannot get repaired in your town is a liability, no matter how good it is. Ask who services it before you buy it.
Kenyan operating realities to plan for
- Power interruptions. Decide now what happens to service when power goes. Gas burners keep a kitchen running; an all-electric kitchen stops.
- Water interruptions. On-site storage is not optional for a food business. Work out your daily water need and store at least a day of it.
- Hard water in many areas will scale kettles, boilers and coffee machines. Budget descaling into your routine from week one, not when the machine slows.
- Gas versus electric costs. Run the numbers for your actual menu before committing your line.
- Spares and servicing. For every powered item, know where the nearest service agent is.
Opening-week reality check
Three things that go wrong in week one, all of them inventory rather than cooking:
- Not enough dishware. Service stalls at the sink. This is why 3Γ matters.
- Not enough small tools. Ladles, tongs and serving spoons vanish into bins and dish racks. Buy double.
- No labelled storage. Stock arrives, gets shelved anywhere, and you are counting inventory by opening lids.
