Aluminium vs Stainless Steel Sufuria: Which for What

Almost every Kenyan kitchen owns aluminium sufurias, and almost every upgrade conversation is about stainless steel. Both are right β€” for different jobs. Aluminium wins on heat response and price; stainless wins on durability and not reacting with your food. The mistake is treating it as a straight upgrade rather than a division of labour.

The acid problem, explained plainly

Aluminium reacts with acidic foods β€” tomato, tamarind, lemon, vinegar. Two things happen: the pan discolours in patches, and the food can pick up a faint metallic edge. Cook a tomato-heavy stew in a thin aluminium sufuria and leave it in the pan overnight and you will taste it the next day.

This is why the traditional split makes sense. Ugali, rice, githeri, boiling water and deep frying are all effectively neutral β€” aluminium is ideal and its fast, even heat is genuinely better for ugali than steel. Anything tomato-based, or anything you want to leave in the pot, belongs in stainless steel.

Never store food in an aluminium sufuria. Cook in it, then move leftovers to a container. That single habit removes most of aluminium's disadvantages.

Why cheap stainless steel burns food

Stainless steel is a poor conductor. On its own it develops hot spots directly over the flame while the rest of the base stays cooler β€” which is exactly how food catches and burns in a ring pattern.

Good stainless cookware solves this with a thick sandwiched base β€” a disc of aluminium or copper bonded between layers of steel. You get steel's non-reactive surface with aluminium's heat spreading.

So when comparing stainless sufurias, the number that matters is base thickness, not the shine:

  • Pick it up. A stainless pot that feels light for its size has a thin base and will burn food.
  • Look at the base edge. A visible layered disc is what you want.
  • Tap the bottom. A dull thud suggests mass; a tinny ring suggests thin steel.
  • Check it sits flat. A base that rocks on a flat surface will never heat evenly.

A thin, cheap stainless pot is worse than a decent aluminium one. This is the single most common disappointment when people "upgrade".

Stopping food sticking to stainless steel

Most complaints about stainless steel are technique, not the pan:

  1. Preheat the empty pan over medium heat for a minute or two.
  2. Test with water: a drop should skitter across the surface as a bead, not sizzle and evaporate instantly.
  3. Then add oil, and let the oil heat briefly.
  4. Then add food, and leave it alone. Protein releases itself when a crust forms. Moving it early is what tears it.

Cold pan, cold oil, immediate stirring β€” that is the sequence that makes people believe stainless steel does not work.

Care, so both last

Aluminium

  • Wash by hand; dishwashers dull and discolour it quickly.
  • Do not store food in it, especially anything acidic.
  • Discolouration is cosmetic β€” boiling water with a little lemon or rhubarb lifts some of it.
  • Replace it once the base thins or warps enough to rock. A warped base wastes gas and cooks unevenly.

Stainless steel

  • Avoid steel wool. It scratches, and scratches trap food and can rust at the marks.
  • For burnt-on food, simmer water with a little bicarbonate rather than scouring.
  • White chalky film is limescale from hard water, not damage β€” wipe it with vinegar.
  • Rainbow-coloured tinting is harmless heat discolouration; vinegar removes it.
  • Dry it after washing if your water is hard, or you will get spotting.

What to own, in what order

A practical Kenyan kitchen is a mixed kitchen, not a matched set:

  1. One heavy aluminium sufuria, large. Ugali, boiling, big batches. Heavy, not thin β€” thin aluminium warps and burns.
  2. One stainless sufuria with a thick base, medium. Stews, tomato dishes, anything you want to leave in the pot.
  3. A second aluminium in a smaller size. Everyday rice and vegetables.
  4. A stainless pot with a lid for long simmering. Beans, bone soup, githeri.
  5. A heavy frying pan. Separate decision from your sufurias.

If you cook on an induction plate, skip aluminium entirely β€” it will not work. Check that a stainless pan is magnetic before buying: if a fridge magnet does not stick to the base, an induction hob will not heat it.
