Keeping Food Fresh Through Power Cuts
A fridge is not a food storage plan in a country with scheduled outages. The two rules that matter: a closed fridge holds food safely for about four hours, and airtight storage does more for your dry goods than refrigeration ever will. Here is what to do during a power cut, what genuinely does not need a fridge, and how to stop weevils and ants taking your shopping.
During a power cut: the four-hour rule
- Do not open the fridge. A closed fridge holds a safe temperature for roughly four hours. A freezer holds around 24 hours if reasonably full, less if half-empty. Every opening costs you time.
- Decide what you need before you open it, then take everything out in one go.
- Move fridge items into the freezer if the outage looks long. The freezer is colder and holds longer.
- Fill gaps in the freezer with bottles of water. A full freezer holds cold far longer than an empty one, and frozen bottles act as ice blocks during the next outage.
- Use a cooler box with ice for anything you will need repeatedly β drinks, the day's meat β so the fridge stays shut.
- When power returns, check before you trust. If frozen food is still hard and holds ice crystals, refreeze it. If it has thawed and gone above fridge temperature for hours, cook it immediately or discard it.
Never refreeze meat that has fully thawed and warmed. When in doubt, cook it through the same day rather than putting it back in the freezer.
What does not need a fridge at all
Kenyan kitchens routinely refrigerate things that are better off outside it:
| Item | Keep where | Note |
|---|---|---|
| Tomatoes | Room temperature | Cold destroys the flavour and texture |
| Onions and garlic | Cool, dry, airy β not a sealed bag | Moisture makes them sprout and rot |
| Potatoes | Dark, cool, ventilated | Never beside onions β each spoils the other |
| Bananas | Room temperature, hanging | Cold blackens the skin |
| Avocado (unripe) | Room temperature until ripe | Fridge only once ripe, to hold it |
| Mangoes, pineapple (whole) | Room temperature | Refrigerate once cut |
| Bread | Airtight bin at room temperature | Fridge makes it stale faster, not slower |
| Honey | Cupboard | Crystallises when cold |
| Flour, rice, sugar, maize meal | Airtight containers | Airtight matters more than cool |
| Cooking oil | Dark cupboard | Light degrades it faster than warmth |
That table alone frees up a lot of fridge space β which in turn means your fridge runs more efficiently and holds cold better during an outage.
The real enemy of dry goods: weevils and ants
In a warm climate, an open packet of flour or rice is a countdown. Airtight storage is not about tidiness; it is pest control.
- Decant everything on the day you buy it. Paper and thin plastic packaging is not a barrier β weevils get in and ants find their way through folds.
- Use containers with a proper gasket seal, not just a push-on lid. If you can smell the contents through a closed lid, it is not airtight.
- Bay leaves or dried chilli in rice and flour containers discourage weevils. It is a household habit that genuinely helps.
- Freeze new flour or rice for 48 hours before decanting if you buy in bulk. It kills any eggs already present β which is where most infestations actually start.
- Never top up an old container with new stock. Empty, wash, dry completely, then refill. Topping up spreads an existing problem into fresh stock.
- Store containers off the floor and away from the wall, so ant trails are visible.
- Label with the date and use oldest first.
Milk, meat and cooked food
- Fresh milk: boil it on arrival if you cannot refrigerate reliably. Boiled and covered, it holds far better through a warm day than raw milk does. Long-life UHT milk needs no fridge until opened, which makes it the sensible backup for outage-prone areas.
- Meat: buy it on the day you will cook it if your power is unreliable. This is the oldest Kenyan shopping habit and still the right one.
- Cooked food: cool it quickly, then refrigerate. Leaving a hot pot to cool slowly on the stove for hours is where problems start, especially with rice and beans.
- Reheat once, thoroughly. Repeated reheating of the same pot across days is a common route to illness.
- Rice: refrigerate within an hour or two of cooking. Cooked rice left at room temperature overnight is one of the genuinely risky items in a kitchen.
Building an outage-proof kitchen
| What | Why it earns its place |
|---|---|
| Airtight containers, a full set | Removes dependence on refrigeration for dry goods entirely |
| A cooler box | Lets you access drinks and daily items without opening the fridge |
| Frozen water bottles | Free ice blocks; also make the freezer hold cold longer |
| A vacuum flask | Hot water for tea through an outage without power |
| A gas burner | Cooking continues; also lets you boil milk and water |
| Water storage containers | Outages and water rationing often arrive together |
| Fridge organiser bins | You find things in one opening instead of three |
The fridge bins point is underrated. Most fridge cold is lost to people standing with the door open looking for something. Organised bins turn a 30-second search into a 5-second grab, which matters a great deal on the day the power is off.
Two habits that change everything
- Keep the freezer full. Even with water bottles. Thermal mass is what buys you 24 hours instead of 12.
- Shop for how you actually store. If your power is unreliable, buying a week of fresh meat is a gamble. Buy dry goods in bulk and fresh food in small, frequent amounts.
Frequently asked questions
How long does food last in a fridge during a power cut?
About four hours if you keep the door closed. A reasonably full freezer holds around 24 hours.
Can I refreeze meat after a power cut?
Only if it is still hard with ice crystals. If it has fully thawed and warmed, cook it that day or discard it.
Should tomatoes be kept in the fridge?
No. Cold damages both flavour and texture. Keep them at room temperature.
How do I stop weevils in flour and rice?
Decant into airtight containers with a gasket seal on the day you buy, add bay leaves or dried chilli, and freeze bulk purchases for 48 hours before storing. Never top up an old container with new stock.
Does bread last longer in the fridge?
No β refrigeration makes bread go stale faster. Use an airtight bread bin at room temperature.
How long can cooked rice sit out?
Refrigerate within an hour or two. Cooked rice left at room temperature overnight is one of the riskiest things in a kitchen.
Why should I keep water bottles in the freezer?
They add thermal mass so the freezer holds cold much longer during an outage, and they double as ice blocks for a cooler box.
