Chopping Boards: Two Is the Real Minimum

One chopping board used for everything is the most common food-safety failure in a home kitchen. Raw chicken juices soak into the surface, and the next thing you cut on it is usually salad that will not be cooked. The fix costs very little and takes no extra time.

The colour system, and why professionals use it

Colour Use for
Red Raw meat
Yellow Raw poultry
Blue Raw fish
Green Vegetables, salad, fruit
White Dairy and bread

You do not need all five at home. Two β€” one for raw meat and fish, one for everything else β€” removes most of the risk. A set of Colour-Coded Commercial Chopping Boards in 50x40cm and 60x40cm is sized for real work: enough surface that pieces do not slide off, which is also a knife-safety issue.

Wood or plastic?

  • Plastic goes in hot soapy water or a dishwasher and can be sanitised properly. It scars over time, and deep knife grooves hold bacteria β€” replace a board once it is heavily scored.
  • Wood and bamboo are kinder to knife edges and look better on a counter. They must never be soaked or put in a dishwasher; they warp and split.

The sensible split is plastic for raw meat, wood for everything else. A 5 Piece Bamboo Chopping Board Set with Holder gives you graded sizes on the counter β€” a small one for a clove of garlic, a large one for prepping a meal β€” and the holder keeps them upright and drying.

Looking after a wooden board

  1. Wash by hand, promptly, with warm soapy water. Never soak.
  2. Dry upright, not flat β€” a board drying flat on a counter warps.
  3. Oil it monthly with food-safe mineral oil. Dry wood is what cracks and splits.
  4. Deodorise with lemon and salt: scrub the cut half of a lemon over coarse salt on the surface, rinse, dry.
  5. Never in the dishwasher. Heat and prolonged water split even good bamboo.

A board that does not slide

A board that moves under the knife is a cut waiting to happen. Lay a damp cloth or a piece of anti-slip liner underneath it and it will not shift.

Frequently asked questions

How many chopping boards do I need?

Two is the practical minimum: one for raw meat and fish, one for everything else. Colour coding makes it automatic.

Is wood or plastic more hygienic?

Plastic can be sanitised in hot water and is better for raw meat. Wood is fine for vegetables and bread if washed and dried properly.

When should I replace a chopping board?

When deep knife grooves have built up, the surface is stained through, or a wooden board has cracked or warped.

Can bamboo boards go in the dishwasher?

No. They warp and split. Hand wash, dry upright, and oil monthly.
