Spice Storage: Racks, Jars and Keeping Flavour Longer

Spices go stale in Kenyan kitchens faster than most people realise, and the reason is almost always where they are kept: above the cooker, in the light, in the bag they came in. Heat, light and air are what kill ground spice. Fixing storage fixes the flavour.

The three enemies, in order

  • Heat. The shelf directly above the hob is the worst place in the kitchen. Move spices at least a metre away.
  • Light. Ground turmeric, chilli and paprika fade and lose potency in sunlight. Clear jars are fine in a cupboard, less so on a sunny counter.
  • Air. A folded-over packet is not a seal. Ground spice loses most of its aroma within months of being opened.

Where should spices be stored in a Kenyan kitchen?

Away from the hob and out of direct sun, in sealed jars. The cupboard beside the cooker is usually the worst spot in the room.

Do spices really expire?

They do not spoil, but ground spice loses its aroma within six to twelve months. If it smells of nothing, it will taste of nothing.

Glass or plastic spice jars?

Glass does not hold odours or stain from turmeric, and it seals better. Plastic is lighter and cheaper for bulk storage in a cupboard.

How many jars do I need?

Most Kenyan households use six to eight spices weekly and keep another ten occasionally. Start with a set of eight and decant only what you reach for.
