Chafing Dishes and Hotpots: Keeping Food Hot for a Crowd
At a Kenyan function, food goes out at 1pm and the last guest eats at 3pm. The equipment question is not how to cook for that crowd — it is how to keep what you cooked at serving temperature for two hours without drying it out. That is the difference between a chafing dish and a hotpot, and most hosts need both.

Sizing to the guest count

Rule of thumb: a 9L pan holds enough rice for roughly 30–35 servings, and it will be scraped clean before the last table is served if it is the only one.

Running a chafer properly
- Hot water in the water pan — not cold. Cold water costs you twenty minutes and a full fuel can.
- Food goes in hot. A chafer holds temperature; it does not cook or reheat.
- Fill the pan two-thirds so it heats evenly and stays easy to serve from.
- Keep a spare fuel can per chafer. Running out mid-service is the classic failure.
- Pre-warm insulated hotpots with hot water for a minute before filling — it adds an hour to how long they hold.
